Ingredients
1 x 250g Packet Snackable Carrots
1 tbsp Butter
1⁄2 small Onion, diced
1 Garlic Clove, minced
2 Cooked Whole Beetroots
1⁄4 cup Goats Cheese
1 tbsp Extra Virgin Olive Oil
1⁄2 small Lemon, juiced
Pinch Salt
Method
- Heat butter in a small frying.
- Add onion and garlic and cook until onion has lightly browned.
- Meanwhile, in a blender blitz beetroot, goats cheese, olive oil, lemon juice and salt.
- Stir through caramelised onion and garlic.
- Serve dip with carrots.
