Creamy Cucumber Carrot Rolls

4 as part of a platter

Ingredients

  • 1⁄2 Avocado, mashed
  • 2 tsp Greek Yoghurt
  • 1⁄2 Lemon, juiced
  • Fresh Herbs, roughly chopped (I used Parsley) Pinch Salt
  • 1 Cucumber 250g
  • Snackable Carrots

Method

  1. Combine avocado, Greek yoghurt, lemon, herbs and salt in a bowl (or blitz in a blender).
  2. Spread mixture on top of a cucumber. Place a carrot at one end and wrap towards the other end, so the cucumber is curling/wrapped around the carrot.
