Ingredients
- 1⁄2 Avocado, mashed
- 2 tsp Greek Yoghurt
- 1⁄2 Lemon, juiced
- Fresh Herbs, roughly chopped (I used Parsley) Pinch Salt
- 1 Cucumber 250g
- Snackable Carrots
Method
- Combine avocado, Greek yoghurt, lemon, herbs and salt in a bowl (or blitz in a blender).
- Spread mixture on top of a cucumber. Place a carrot at one end and wrap towards the other end, so the cucumber is curling/wrapped around the carrot.
