Garlic Herb Roasted Veggies

Ingredients

  • 2 Potatoes, cut into cubes
  • 1 x 250g Packet Snackable Carrots
  • 3 Garlic Cloves, minced
  • 1 tsp Dried Basil
  • 1 tsp Dried Oregano
  • 1⁄2 tsp Dried Parsley
  • 1⁄4 tsp Dried Onion
  • Sea Salt
  • Extra Virgin Olive Oil, drizzled
  • 1 x Packet Snackable Beans
  • 1⁄4 cup Pecans
  • 1⁄4 cup Feta, crumbled
  • Fresh Parsley, roughly chopped

Method

  1. Preheat oven to 200°C and prepare a baking dish.
  2. Place potatoes, carrots, garlic, dried basil, dried oregano, dried parsley, dried onion, sea salt in a bowl. Drizzle with olive oil and toss to coat vegetables.
  3. Place in dish and bake for 20 minutes.
  4. Add beans and pecans, cook for a further 10 minutes.
  5. Serve with crumbled feta and fresh parsley.
