As a Side Dish
Ingredients
- 2 Potatoes, cut into cubes
- 1 x 250g Packet Snackable Carrots
- 3 Garlic Cloves, minced
- 1 tsp Dried Basil
- 1 tsp Dried Oregano
- 1⁄2 tsp Dried Parsley
- 1⁄4 tsp Dried Onion
- Sea Salt
- Extra Virgin Olive Oil, drizzled
- 1 x Packet Snackable Beans
- 1⁄4 cup Pecans
- 1⁄4 cup Feta, crumbled
- Fresh Parsley, roughly chopped
Method
- Preheat oven to 200°C and prepare a baking dish.
- Place potatoes, carrots, garlic, dried basil, dried oregano, dried parsley, dried onion, sea salt in a bowl. Drizzle with olive oil and toss to coat vegetables.
- Place in dish and bake for 20 minutes.
- Add beans and pecans, cook for a further 10 minutes.
- Serve with crumbled feta and fresh parsley.
