Radish and Butter Bean Salad

Ingredients

1⁄2 x 250g Packet Snackable Radish, sliced

1 x 400g can Butter Beans, rinsed

3 handfuls Lettuce Leaves/Rocket

1 Cucumber, sliced

1 Spring Onion, sliced

1/3 cup Parsley, roughly chopped

2 tbsp Parmesan, shaved

1 tbsp Mixed Seeds (I used pumpkin, hemp, sunflower)

Dressing

1⁄2 Lemon, juiced

2 tbsp Extra Virgin Olive Oil

1 tsp Honey

Method

  1. Combine the dressing ingredients in a bowl and set aside.
  2. Combine all remaining ingredients in a salad bowl.
  3. Drizzle salad with dressing upon serving.
