Roasted Radish Pesto Crostini

Ingredients

1 Baguette, sliced & toasted
1 x 250g Packet Snackable Radish 2 Garlic Cloves, minced Extra Virgin Olive Oil, drizzled 1/3 cup Green Pesto (homemade or
good quality store bought) Salt & Pepper, sprinkled 2 tbsp Feta, sprinkled 2 tbsp Fresh Chives, finely chopped

Method

  1. Preheat oven to 180 degrees and prepare a baking tray.
  2. Cut some radishes into quarters and some into thin coins.
  3. Lay out on a baking tray, sprinkle with garlic, drizzle with olive oil and season with salt and pepper.
  4. Bake for 20 minutes or until radishes softened.
  5. Spread baguette slices with pesto. Top with radishes, feta and fresh chives.
