As a Side Dish
Ingredients
- 250g Snackable Carrots
- 1/2 cup Chickpeas
- 1/2 tsp Cinnamon
- 1/4 tsp Ginger
- 1/4 tsp Nutmeg
- 1 tbsp Extra Virgin Olive Oil, drizzled
- 1 tbsp Honey, drizzled
- 1/4 cup Feta, crumbled
- Sea Salt
- 2 tbsp Pomegranate
- Fresh Parsley, roughly chopped
Method
- Preheat oven to 200°C fan forced and prepare a baking tray.
- Cut small 1mm thickness slits into carrots (optional step for extra flavour retention).
- Combine carrots, chickpeas, spices, oil and honey in a bowl and stir to combine.
- Spread out spiced carrots and chickpeas on a baking tray, sprinkle with feta and salt.
- Bake for 15-20 minutes or until carrots are tender.
- Serve with pomegranate and garnish with parsley.
